Warm Mussel Salad

Dish
 200 g cooked mussels
 ½ bulb fennel - very thinly sliced
 ½ red onion - very thinly sliced
 a handful of rocket
Dressing
 2 tbsp olive oil
 1 tbsp white wine vinegar
 1 clove of garlic
 1 tsp grain mustard
 freshly ground pepper
 handful chopped parsley
